Cotton oil, the tasty alternative!
Cotton seed, like sunflower, corn or soybean, is fast gaining acceptance worldwide, as a viable cooking alternative.
It is used popularly for Salad Oil, Mayonnaise and Salad Dressing besides being suitable for frying, deep frying, use as margarine, shortening and more. French fries and other snack foods, patties, cereals, breads. After hydrogenation, it can be used as cocoa butter, and as an alternative to butter fat in making of frozen desserts like ice-cream, jelly and more.
Among regular oils globally used in food preparations, cottonseed oil is considered one of the 'reference' oils for assessing the quality of other oils, officially by AOCS (American Oil Chem Society). It is also considered as one amongst the premium oils in the world market like olive oil and corn oil, but far less expensive.
Cotton seed oil is an interesting source of lipids in many aspects. It has essential fatty acids in a balanced mixture, and is an excellent source of linoleic acid, which increases resistance to infections and dehydration. Cottonseed oil is also rich in vitamins especially, Vitamin D.
Cottonseed oil has a balanced cholesterol configuration, with both LDL and HDL lipoproteins present in appropriate quantities. The Low Density Lipoprotein (LDL) is the one that carries cholesterol out of the liver to all tissues of the body, while High Density Lipoprotein (HDL) transports cholesterol from the peripheral tissues back into the liver and later disposes it as bile acids. With its high PUFA (polyunsaturated fat) content cottonseed oil is also a valuable dietary fat substitute.
Presently, most of the needs of the population of Republic of Benin for edible oil are covered by import (mainly palm oil) from the sub region and even from the Far East.
